
Biscuits and Sausage Gravy
Ingredients
- For the biscuits:
- 2 cup all-purpose flour
- 1 tbsp baking powder
- 1 tsp sugar
- 0.5 tsp salt
- 0.5 cup (1 stick) cold unsalted butter, cubed
- 0.75 cup milk
- For the gravy:
- 1 lb ground breakfast sausage
- 2 tbsp unsalted butter
- 0.25 cup all-purpose flour
- 2.5 cup milk
- 0.5 tsp salt
- 0.5 tsp black pepper (more if you like it punchy)
Steps
- Preheat oven to 450°F (230°C).
- In a bowl, whisk flour, baking powder, sugar, and salt for the biscuits.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Add milk and stir just until combined.
- Turn dough onto a floured surface, pat into a 1-inch thick round, and cut with a biscuit cutter.
- Place biscuits on a baking sheet and bake 10–12 minutes until golden.
- While the biscuits bake, cook the sausage in a skillet over medium heat until browned and cooked through; drain excess fat.
- Add butter to the skillet with the sausage and melt.
- Sprinkle in flour and cook, stirring, 1–2 minutes to form a roux.
- Gradually whisk in milk and simmer until thickened, about 4–5 minutes.
- Season gravy with salt and plenty of black pepper.
- Split warm biscuits and ladle generous gravy over the top.
- Serve immediately.
