
American Chop Suey
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 green bell pepper, diced
- 1 can (28 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and black pepper to taste
- 12 oz elbow macaroni or other short pasta
- Grated Parmesan for serving (optional)
Steps
- Bring a large pot of salted water to a boil and cook pasta until al dente; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook 4–5 minutes until softened.
- Add garlic and cook 30 seconds.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer 10–12 minutes until sauce thickens.
- Stir in cooked pasta, mixing well so everything is coated.
- Serve hot with grated Parmesan if desired.
