
Southern-Style Mashed Potatoes
Ingredients
- 2 lb russet or Yukon Gold potatoes, peeled and cut into chunks
- 4 tbsp unsalted butter
- 0.5 cup whole milk or cream
- 0.25 cup sour cream (optional but worth it)
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tbsp fresh chives, chopped
Steps
- Place potato chunks in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 15–20 minutes.
- Drain the potatoes and return them to the pot.
- Heat milk (and sour cream if using) with 2 tbsp butter until warm.
- Mash the potatoes while slowly adding the milk-butter mixture until smooth and creamy.
- Stir in the remaining butter, salt, and pepper.
- Fold in chopped chives.
- Serve warm with extra butter on top if you're feeling generous.
