
Revuelto Gramajo
Ingredients
- 2 cup frozen shoestring (matchstick) potatoes
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 1 cup cooked ham, diced
- 4 large eggs
- 0.5 tsp salt
- 0.25 tsp black pepper
- Chopped parsley for garnish (optional)
Steps
- Heat olive oil in a large skillet over medium-high heat.
- Add frozen potatoes and cook 5–7 minutes until crispy and golden.
- Stir in onion and ham; cook 2–3 minutes until heated through.
- In a bowl, whisk eggs with salt and pepper.
- Pour eggs over the potato and ham mixture and stir gently until eggs are just set.
- Remove from heat, garnish with parsley if desired, and serve immediately.
