One-Pot Pomodoro
Ingredients
- 8 oz spaghetti or linguine
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 2 cup vegetable or chicken broth
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp dried basil or oregano
- 0.25 tsp chili flakes (optional, for personality)
- 0.25 cup grated Parmesan cheese
- 2 tbsp chopped parsley or basil
Steps
- Place pasta, olive oil, garlic, tomatoes, broth, salt, pepper, and dried herbs into a large skillet or pot. Yes, uncooked pasta. Trust the process.
- Bring to a boil over medium-high heat, then reduce to a simmer.
- Cook 8 to 10 minutes, stirring occasionally so it doesn't glue itself into a pasta brick.
- When liquid reduces into a light sauce and pasta is tender, remove from heat.
- Stir in Parmesan and fresh herbs like you meant for it to look this good.
- Serve immediately before it congeals into tomorrow's mistake.
