
Eggs Sardou (Diner Style)
Ingredients
- 4 large eggs
- 2 english muffins or slices of bread, toasted
- 1 can artichoke hearts, drained and halved
- 4 tbsp butter
- 1 tbsp flour
- 1 cup milk
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tsp lemon juice
- 1 tbsp chopped parsley (optional)
Steps
- Bring a pot of water to a gentle simmer and poach eggs about 3–4 minutes until the whites are set but yolks are still soft.
- Meanwhile, melt 2 tbsp butter in a small saucepan over medium heat. Stir in flour and cook 1 minute.
- Gradually whisk in milk until smooth and thickened, about 3–4 minutes.
- Season the sauce with salt, pepper, and lemon juice; remove from heat.
- Arrange toasted English muffins or bread on plates and top each with artichoke halves.
- Place two poached eggs on each toast and spoon the creamy sauce over the top.
- Sprinkle parsley if desired and serve immediately.
