
Fast Breakfast Tacos
Ingredients
- 4 small flour or corn tortillas
- 3 large eggs
- 1 tbsp milk or water
- 0.25 tsp salt
- 0.25 tsp black pepper
- 0.5 cup shredded cheese (cheddar or Mexican blend)
- 1 tbsp butter or oil
- 0.5 cup cooked breakfast sausage, crumbled (optional)
- Optional add-ins: cooked bacon bits, diced tomatoes, sliced avocado, salsa
Steps
- If using sausage, cook it in a skillet over medium heat until browned and fully cooked. Set aside.
- In a bowl, whisk eggs with milk, salt, and pepper.
- Heat butter or oil in the skillet over medium heat.
- Pour in egg mixture and scramble until just set.
- Warm tortillas in the microwave or skillet for 15–20 seconds.
- Divide scrambled eggs among the tortillas.
- Add cooked sausage if using, then sprinkle with cheese and any other toppings.
- Fold and serve immediately.
