
Pinchos (Spanish Skewers)
Ingredients
- 1 lb pork loin or chicken breast, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces (optional)
- 1 green bell pepper, cut into 1-inch pieces (optional)
- 1 small onion, cut into wedges (optional)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 0.5 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- Wooden or metal skewers
Steps
- If using wooden skewers, soak them in water for 10 minutes so they don't catch fire. Yes, water.
- Preheat grill or grill pan over medium-high heat.
- In a bowl, toss the meat, bell peppers, and onion with olive oil, smoked paprika, garlic powder, salt, and black pepper.
- Thread meat and vegetables alternately onto skewers.
- Place skewers on the grill and cook 8 to 10 minutes, turning every few minutes until meat is cooked through and veggies have grill marks.
- Serve hot with crusty bread or a squeeze of lemon if you're feeling polite.
