
Ultra-Fast Veggie Egg Rolls
Ingredients
- 8 egg roll wrappers
- 2 cup coleslaw mix (shredded cabbage & carrots)
- 2 tbsp soy sauce
- 1 tsp sesame oil (optional)
- 1 tsp grated ginger or garlic powder (optional)
- Non-stick spray or 1 tbsp oil
Steps
- Place coleslaw mix in a bowl and toss with soy sauce, sesame oil, and ginger or garlic powder if using.
- Lay out an egg roll wrapper and spoon 2–3 tbsp filling near one corner.
- Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the edge with a dab of water.
- Preheat air fryer to 390°F (200°C) or oven to 425°F (220°C).
- Lightly spray egg rolls with non-stick spray or brush with oil.
- Air fry 6–8 minutes (or bake 12–15 minutes), turning once, until golden and crisp.
- Serve hot with sweet chili or soy dipping sauce.
