Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 green bell pepper, diced (optional)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp paprika
  • Salt and black pepper to taste
  • 12 oz elbow macaroni or other short pasta
  • 1.5 cup shredded cheddar cheese

Steps

  1. Bring a large pot of salted water to a boil and cook pasta until al dente; drain and set aside.
  2. Heat olive oil in the same pot over medium heat. Add onion and bell pepper and cook 4–5 minutes until softened.
  3. Add garlic and cook 30 seconds.
  4. Add ground beef and cook until browned, breaking it up with a spoon.
  5. Stir in diced tomatoes, tomato sauce, kidney beans, chili powder, cumin, paprika, salt, and pepper. Simmer 10 minutes.
  6. Stir in cooked pasta until fully coated.
  7. Remove from heat and sprinkle shredded cheddar on top; let melt before serving.
  8. Serve hot.
