Cheese-Filled Johnnycakes

Ingredients

  • 1.5 cup fine cornmeal
  • 0.75 tsp salt
  • 1 tbsp sugar (optional)
  • 1 tsp baking powder
  • 3/4–1 cup water
  • 1 cup shredded cheddar or mozzarella
  • 2-3 tbsp oil or butter for frying

Steps

  1. In a bowl, whisk cornmeal, salt, sugar (if using), and baking powder.
  2. Gradually stir in water until a thick, soft dough forms (not runny).
  3. Divide dough into 8 small balls.
  4. Flatten one ball in your palm, place a spoonful of cheese in the center, and cover with another flattened piece or fold dough over to seal.
  5. Heat oil or butter in a skillet over medium heat.
  6. Cook filled cakes 3–4 minutes per side until golden brown and crisp outside, melted inside.
  7. Transfer to paper towels briefly, then serve warm before the cheese remembers gravity.
